{"id":509,"date":"2018-05-21T06:35:41","date_gmt":"2018-05-21T06:35:41","guid":{"rendered":"http:\/\/molidepomeri.com\/raviolis-a-los-tres-quesos-con-albahaca\/"},"modified":"2018-05-31T13:23:07","modified_gmt":"2018-05-31T13:23:07","slug":"three-cheeses-raviolis-with-basil","status":"publish","type":"post","link":"https:\/\/molidepomeri.com\/en\/three-cheeses-raviolis-with-basil\/","title":{"rendered":"Three cheeses raviolis with basil"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>250g ricotta cheese<\/li>\n<li>75g pecorino cheese<\/li>\n<li>100g Parmesan cheese<\/li>\n<li>basil leaves<\/li>\n<li>salt and freshly ground black pepper<\/li>\n<li>fresh pasta dough<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>3 tablespoons olive oil<\/li>\n<li>1 lemon<\/li>\n<li>1 jar 4 cheeses sauce of Moli de Pomer\u00ed<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><\/p>\n<ol>\n<li>Mix the ricotta, the pecorino, 70gr of parmesan and basil in a bowl. Season with salt and lots of pepper. Set aside.<\/li>\n<li>Cut the dough into 4 parts. Put  1\/4 of the dough on a floured surface and knead it. Add 12 spoonfuls of the cheese, leaving enough space between the piles to close the ravioli.<\/li>\n<li>Place a second sheet of pasta on top. Press gently around the piles to close the two sheets, trying not to let too much air around them. With a sharp knife, cut 12 ravioli. Repeat process with remaining two sheets.<\/li>\n<li>Boil a big saucepan of salted water.  Throw a tablespoon of olive oil, then the ravioli and leave about 5 minutes, until pasta becomes al dente. Drain with a slotted spoon. Arrange on 4 plates.<\/li>\n<li>Mix the extra virgin olive oil, the juice and butter, the zeste of a lemon and two tablespoons of 4 cheeses sauce of Moli de Pomer\u00ed .
